I was thrilled when I found chickpea flour in a health food store last week. It literally took hours for them to deliver my order! It was then that I decided that I would give it a try. And boy am I glad that I did, these delicious waffles are so healthy, so delicious and so easy to make.
Most health food stores and supermarkets sell chickpea flour which is quite reasonably priced. Once I had two boxes home, I began my quest to find the perfect ingredients for my first batch of vegan & gluten-free waffles. I knew I was going to need chickpea flour, some refined vegetable shortening, maple syrup, vegan margarine, non-hydrogenated oil and unrefined sea salt. Once you have these simple ingredients in place, it is quite simple to make your delicious vegan waffles!
After placing the wet ingredients into the food processor, I went ahead and mixed them together. After waiting around 10 minutes, I placed the wet ingredients in one bowl, and my delicious vegan waffles were ready. After cooking for about 30 minutes, I removed my waffles from the oven and set them to rest on a pan. To enhance the flavor of the waffles, I added some vegan margarine and non-hydrogenated oil. And once again, after letting them cool down, they were delicious!
If you are new to baking waffles, I suggest that once you master the basic ingredients, you start adding in your own special flavorings. Feel free to experiment with different types of spices and nuts to add to your waffle mixture. For example, you may like to have some vanilla extract mixed into your batter. Or maybe add a pinch of Cayenne pepper. My mouth-watering waffles sure make a statement!
